Our region, Friuli, is the birthplace of top-class wines, with some of the most prestigious, well-known and famous DOC areas in the world, this is where our fresh and quality grapes are coming from.
Our long-lasting relations with the most famous Friulian wineries, not only suppliers but primarily friends, which allow us to select and control the quality of the grapes and the pomace. A fascinating task which is necessary to guarantee and produce an excellent distillate!

THE PATRIARCH OF THE STILLS

The history of the Bepi Tosolini Distillery began in 1943 when Bepi Tosolini, born in Friuli in 1918, a fervent connoisseur of his land and its traditions, a great supporter of his region and its products, decided to create a different grappa, transforming it from a simple, humble, distillate into a product intended for a sophisticated, demanding public.
In the 1940s, believing that grappa could conquer world markets was a true prophecy which, just a few years later, would become astoundingly true. Bepi Tosolini invested his entire life following his personal dream! In the 1950s, he built a new distillery in Udine together with one of the largest grappa cellar in Italy.

The intuition and skill of Bepi Tosolini led him to implement significant production innovations. Described by a top reporter from the “Corriere della Sera” dated 1974 as the “patriarch of the stills”, Bepi commissioned manually operated steam stills which are still used in the company today and are the real key to a superlative product.

Indeed, the steam still does not intrude on the pomace or the grape, rather it is delicate and respects the perfumes and aromas.

THE STORY OF THE DISTILLERY IS THE STORY OF A FAMILY

Knowledge, respect, hard work and honesty: the all-important legacy of values of Bepi and his wife, Giovanna were destined to be passed on to the entire Tosolini family. First, the eldest son Giovanni and now the grandchildren Giuseppe, Bruno and Lisa work together in the distillery created by the patriarch, following in the footsteps and continuing the dream of a great family. So, for three generations, production rhythms and rules, refining and ageing have remained the same, while focusing on the evolution of grappa and the fourth generation.

THE INGREDIENTS

Meticulously selected primary ingredients are the undeniable basis of all our top-quality distillates. Bepi Tosolini can rely upon a trusted network of local suppliers and carefully choose the pomace for its grappas which are distilled fresh, just a few hours after harvesting. No other method of preserving the pomace can surpass the result achieved through freshness. The fresh pomace is the first secret of our recipe; traditional stills, manual expertise and respect correct times for quality are the essential ingredients which distinguish a special distillate with a unique personality.

ARTISANAL DISTILLATION

In 1973, the new distillery was built in Povoletto, with hand-operated steam stills and the new bain-marie stills. In the world of distillates, the value brought by traditional stills is widely recognised because they preserve the perfumes and aromas to produce a pure and precious distillate. In the Bepi Tosolini Distillery, the slow steps and small batch production of the traditional plants have marked the passage of quality time for almost a century.

AGEING

After distillation, the grappa needs to rest for many months to recompose its structure and its perfumes, reaching the best level of ageing. Ageing takes place in wood barrels for a minimum period of 12 months. Special casks made of Plum or Chestnut or Cherry wood creates the limited edition distillates with different nuances and flavours. The Tosolini cellars are place under the surveillance of the Customs and Monopoly Agency which with its seals certify compliance with the ageing times.
